Stainless steel is the most popular material for knife production due to its corrosion resistance and easy maintenance. It is appropriate for every kind of use and is indispensable everywhere there is contact with food or other corrosion substances. This especially applies to cooking, butchering, food preparation and hunting. Stainless steel must contain at least 13 % chrome, though this does not mean it is resistant on all substances. When it comes in contact with acids, special stain-proof steels are required.

 

BÖHLER N690 STAINLESS STEEL KNIFE

Böhler N690 is a stainless steel with the following alloy element contents: Chrome 17.3%, Cobalt 1.5%, Molybdenum 1.1% and Vanadium 0.1%. The company Böhler from Austria produces it. N690 is a great compromise between high corrosion resistance and cutting properties; it is very appropriate for re-sharpening. Forging is normally done by a hot forming process, and it can be hardened from 58 up to 62HRC. Most knife manufactures, e.g. Viper, harden it to 58-60 HRC due to higher toughness achieved this way. N690 is mostly used for outdoor and hunting knives.

 

400 SERIES STAINLESS STEEL KNIFE

The stainless steel 400 series is commonly used for knives of all purposes due to good material properties and easy sharpening. Stainless steel 440A, also known as 1.4116, is very corrosion resistant and has excellent cutting properties; therefore, it is very suitable for knives where the blade is in contact with food, e.g. for chefs, butchers, or kitchen use. 440C is also high quality stainless steel. In comparison with 440A, it contains more carbon, and therefore it is also firmer, tougher, and more appropriate for hunting, everyday, outdoor or tactical use.

 

AUS STAINLESS STEEL KNIFE

AUS stainless steels are produced by the Japanese company Aichi Steel Corporation. Due to vanadium content, they are distinguishable from other steels in high wear-resistance and toughness.

 

SAN-MAI STEEL KNIFE

San-mai is widely known composite steel, which is used for knife blades by the American producer Cold Steel. A great combination of toughness and surface hardness is reached with a combination of different layers in one blade. Such blades have a core that is made of VG-1 and a surface made of 420j.
