Ultra-high carbon steels contain from 1.0 up to 2.0 % of carbon, and this means that carbon is the main added element to steel. Steels which contain more than 2.0 % of carbon are called cast iron and are not appropriate for knife manufacturing because they are not tough and flexible enough.

Ultra-high carbon steels can be tempered to high surface hardness, higher than those found by blades made of high carbon steels. Hardness depends on quenching and thermal-treatment process. Ultra-high carbon steels are characterized by strength and toughness, which are higher than in blades made from stainless steels but at the same time lower than by blades made from high carbon steels. Because of their mechanical properties, they are very suitable for forging, and it is characteristic for these blades that they can be sharpened very accurately. However, due to lower wear-resistance, they also dull quicker by abrasion. The positive thing is that they can be easily and quickly sharpened. Because ultra-high carbon steel is not stain resistant, knife manufacturers use special blade coatings for knives from this steel, which are used in contact with water, mud or other corrosive media.
